about Soy
Soybeans
A member of the legume family,
the Soybean plant stands about 2 feet tall, the
leaves, stems and pods are covered with soft brownish
green hairs and about two to three Soybean seeds
are grown in each pods.
Soybeans are a rich source of protein, unsaturated
fats, complex carbohydrates, vitamins, minerals,
as well as phytoestrogens and Omega 3 fats. They
contain no cholesterol or lactose. The first recorded
usage of Soybeans was 5000 years ago in China
Soy
facts from Soyfoods USA
Researchers
from Tulane University say adding soy to your diet
can improve levels of good cholesterol. They studied
150 men and women between the ages of 35 and 65
with normal cholesterol levels. For 12 weeks, half
of the participants received a soy supplement every
day while the other half received a carbohydrate
placebo. At the end of the study, those receiving
soy showed nearly a 5 percent increase in their
"good" cholesterol levels when compared to the control
group. Jiang He, M.D., Ph.D., from Tulane University
says, "When 40 grams of soy protein were added to
the daily diet of a group of men and women with
normal lipid profiles, their levels of 'good' high-density
lipoprotein (HDL) cholesterol increased, while their
levels of 'bad' low-density lipoprotein (LDL) cholesterol
were not significantly affected." Previous studies
show soy has a significant benefit on people who
have high cholesterol levels, but this study shows
those benefits also expand to people with normal
cholesterol levels. Soy protein contains all the
essential amino acids found in animal protein. Dr.
He says, "Most bean proteins are good for health.
However, soybean protein is the only one that has
been documented to affect cholesterol levels by
clinical trials." The results of the study were
presented at the Cardiovascular Disease Epidemiology
and Prevention conference held in San Antonio, Texas.

A
feature at just-food.com explains that 2000 new soy
products have been launched over the past 10 years,
with sales exceeding $2.5 billion in the US. The article
states that soy food's rising popularity is largely
due to its health benefits, endorsed by the FDA and
the American Heart Association. Research shows that
soy can help lower cholesterol and reduce the risk
of heart disease, osteoperosis, cancer and diabetic,
kidney disease.http://www.just-food.com/features_detail.as
American Journal of EpidemiologyIn the American
Journal of Epidemiology 2001:153:1206-1212, it was
reported that eating lots of tofu may reduce levels
of lead in the blood, new study findings suggest.
Researches are not exactly sure how tofu lowers lead
levels, but they suspect that calcium in the soy-based
food may keep the body from absorbing and retaining
lead.Exposure to high levels of lead can cause decreased
intelligence, impaired nervous system development,
stunted growth, hearing abnormalities and learning
disabilities.http://www.aje.oupjournals.org/content/vol153/issue12/Abstract:

HatchomisoExtract:MISO'S outstanding
medicinal qualities have been confirmed by scientific
research. In 1965, scientists at Japan's National
Cancer Research Center found that those who regularly
eat miso soup suffer significantly less from some
forms of cancer and heart disease. In 1972 researchers
discovered an alkaloid in miso that discharges heavy
metals from the body. Considered an important medicinal
food, its daily use is credited with numerous health
benefits, including lowering cholesterol, alkalinizing
the blood, neutralizing the effects of smoking and
environmental pollution, and helping to prevent radiation
sickness. http://www.cjn.or.jp/hatchomiso/index-j.html
