Mexican Tofu Scramble with Tortillas

Cooking with crumbled tofu is a delicious and nutritious way to enjoy a protein-rich, cholesterol-free dish that mimics the light, fluffy texture of scrambled eggs. King International’s Mexican-inspired tofu scramble is vibrant, flavourful, and perfect served with warm tortillas, fresh salsa, and a festive spirit.


Ingredients

For the Scramble

  • Vegetable oil

  • 1 onion, diced

  • 375g Pureland Tofu, crumbled

  • 1 small zucchini, diced

  • 1 small red capsicum, diced

  • ¾ cup corn kernels

  • ¼ cup green onions, diced

  • Optional: ½ cup mozzarella cheese


Tofu Seasoning

  • 1 tsp ground cumin

  • ½ tsp paprika

  • ½ tsp garlic powder

  • 1/8 tsp salt(Or use store-bought taco seasoning mix.)


Easy Homemade Tomato Salsa

  • 3 tomatoes, diced

  • 1 tsp chopped coriander

  • 1 small onion, diced

  • Lemon juice

  • Salt & pepper, to taste


Method

  1. Cook the Tofu: Heat a splash of vegetable oil in a large non-stick pan over medium heat. Add the diced onion and sauté until fragrant. Add the crumbled tofu and sprinkle the seasoning evenly over the top. Cook for 4–6 minutes, or until the tofu begins to brown. Transfer to a bowl and set aside.

  2. Cook the Vegetables: Add another splash of oil to the same pan, then add the zucchini, capsicum, corn, and green onions. Season lightly with salt and sauté for about 3 minutes, until the vegetables have softened.

  3. Combine & Finish: Return the cooked tofu to the pan and mix through with the vegetables. Remove from heat and stir through the mozzarella (if using) until just melted.

  4. Make the Salsa: Combine diced tomatoes, chopped coriander, and onion. Add lemon juice, salt, and pepper to taste.

  5. Serve: Enjoy the Mexican tofu scramble with warm tortillas and fresh tomato salsa.
